If there is one breakfast food that I crave for the most (just as much as vegan longanisa), it’s pancakes.
The idea of wheat, eggs and milk pan-fried in butter to form a fluffy fat pastry and topped with sweet fruity syrup makes me salivate. I personalize well-loved dishes I recreate at home by tweaking the ingredients to make it healthier but more exciting.
In the case of pancakes, since I am obsessed with coffee and healthful ingredients like organic whole wheat flour and oats, I created something that I would love to eat for Sunday brunch at home. Ever since I was young, I would always eat at Pancake House and love the whipped butter they serve. I finally tried doing it at home and it’s super easy! All you need is great quality dairy like Arla and a Breville Scraper Mixer Pro.
Whipped Vanilla Butter on Whole Wheat Coffee Pancakes
Yield: 8 pancakes
Ingredients
1 bar butter, softened
¼ cup whole milk
1 vanilla pod
½ cup strawberries
¼ cup coco syrup or maple syrup
2 Tbsp water
1 tsp cornstarch
2 Tbsp Dried coconut (optional)
¾ cup whole wheat flour
¼ cup rolled oats
1 Tbsp coco sugar
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
1 cup milk with 1 Tbsp vinegar combined (buttermilk)
1 large egg
2 Tbsp instant coffee granules
2 Tbsp unsalted butter, melted and cooled
Instructions
- Place the butter and milk in Breville Scraper Mixer Pro with a whisk attachment.
- Mix on low speed until the butter and milk combine.
- Scrape vanilla beans from the pod into the bowl then whip on high speed for 2-4 minutes, or until the butter is light and fluffy. Store in the refrigerator until ready for use.
- Set a small pot on low heat and pour strawberries, syrup and water. Simmer until strawberries soften. Add cornstarch and stir. Set aside.
- In a large bowl, whisk together the flour, oats, coco sugar, baking powder, baking soda, and salt. Set aside.
- In a medium bowl, whisk to combine the buttermilk, egg, coffee, and butter.
- Add the wet ingredients to the dry ingredients and mix together.
- Place skillet over medium heat. When hot, pour ¼ cup batter. When bubbles start to form, flip the pancake and cook an additional 1-2 minutes.
Notes
Using the Breville Scraper Mixer Pro is a breeze because of the knob and guide that helps you decide what speed you should be using. It is a heavy-duty mixer that is so versatile yet extremely easy to use. From kneading pizza dough to mixing just about anything you need for baking, you can also make ice cream in it by purchasing the special bowl. You churn ice cream using the same machine!
But of course, since making whipped butter as been a dream of mine, it had to be the first thing I make with my new toy.

When hot, pour ¼ cup batter.
When bubbles start to form, flip the pancake and cook an additional 1-2 minutes.
Have the whipped vanilla butter ready before you pour the warm hot strawberry syrup on the pancakes.
I like to be cool and use an ice cream scooper.
You have the option to sprinkle anything you want on these healthy pancakes – dried coconut, chia seeds, nuts!

Get a good compact interchangeable lens camera, a good lens with an aperture of F1.7 – 2.8 is ok, 24-35mm lens. Then take lots of pictures and practice! The only way to train your eye is to keep taking pictures.
